Introduction to sturgeon

Sturgeon is the name of a type of fish with the scientific name Acipenser with more than 21 species found. Sturgeon is one of the oldest fish in existence until now.

Origin and distribution

This type of fish is native to Asian, European and North American waters. Sturgeon have a length (adult) of about 2.5-3.5m that you can easily see in real life. However, there are some relatives that can weigh more than 1 ton and be over 4 meters long.

This type of fish appeared more than 100 million years ago and is divided into 4 types, 25 species; includes shortnose sturgeon, star sturgeon, white sturgeon, beluga and sterlet. Some species only live in fresh water, but others live in the open sea. During the spawning season, they swim back to the rivers.

Characteristics of sturgeon

Similar to sharks or rays, sturgeon are boneless. Their skeleton is just cartilage (an attractive feature that I like). The fish's body is tube-shaped and consists of 5 rows of spines (all cartilage), the skin is thick, tough, rough in color and has no scales. The small fish's mouth is horizontal, has no teeth, long pointed nose and beard. The color of fish depends on the species, age and farming area.

Sturgeon are bottom-feeding fish, using their wedge-shaped snouts to scour soft mud to eat crustaceans and small fish.

Popular types of sturgeon

Russian sturgeon: Russia is known as having the highest quality sturgeon in the world. Sturgeon in Russia is distributed in Azerbaijan, Bulgaria, Georgia, Iran, Kazakhstan. In addition, they are also found in Romania, Russia, Türkiye and Ukraine also have this type of fish.

European sturgeon: Also known as common sturgeon, Baltic sturgeon or Atlantic sturgeon. They live on all European coasts. This species here can be up to 4 meters long. Currently, due to overfishing, this type of sturgeon is almost exhausted.

Small sturgeon: This type of sturgeon lives mainly in the Black, Caspian, Azov, Baltic, White Sea, Barents, Kara seas and upstream into Russian rivers. They are prized for their excellent meat quality as well as for providing the best eggs. These small sturgeon are no more than 1 meter long.

There are also other types of sturgeon such as: star sturgeon, lake sturgeon, Beluga sturgeon with different characteristics and living water areas.

In Vietnam, sapa sturgeon are raised mainly in Sa Pa, Lao Cai, Bac Kan… and some northwestern regions. Sapa sturgeon meat is chewy and fatty. There are two types of fish in Sapa: raised for meat and eggs.

What's special about sturgeon eggs?

When looking for sturgeon eggs, there are also many types with “sky-high” prices. Personally, I say above the clouds because you will be extremely surprised to know its selling price. It's not sturgeon meat that the super-rich care about, but sturgeon eggs. Ranked as one of the 10 most luxurious dishes on the planet, 1kg of sturgeon eggs costs about 180 million VND/kg, some up to 1.8 billion VND/kg (According to Dan Tri).

Considered black gold, the aristocratic dish consumes a whole stick of gold at each meal, so sturgeon caviar is only for the super rich to enjoy. In the world, Russian sturgeon eggs are the most famous.

Selling price of sturgeon eggs

Through research, the price of Caviar caviar ranges from 1,000-10,000 USD/kg depending on the quality, size, and shine of each type. The larger the fish eggs and the brighter the color, the more expensive they are.

The most popular today is Sevruga sturgeon with a moderate price (ranging from about 1,000-2,000 USD/kg), producing eggs with bright, dark color and great flavor.

Osetra sturgeon caviar has a slightly higher value than the above type (ranging from about 3,000-5,000 USD/kg), has a dark brown color with a golden sheen, and is very delicious to eat.

Beluga sturgeon caviar is more premium than the above two types with the usual color being dark gray, large egg grains, very fragrant food, priced at about 8,000 USD/kg.

The highest quality is “Golden Caviar” with amber yellow color. This type is the most expensive because it is extremely rare and has extremely high nutritional value, about 9,000-10,000 USD/kg.

Why are sturgeon eggs so expensive?

The reason why white sturgeon eggs are so expensive is that a white sturgeon must be over 20 years old to start producing eggs.

The process of egg collection and processing is also very rigorous and strict. Large sturgeon are dissected to remove eggs using the abdominal incision method. After being collected, eggs are processed in two ways: traditional salt and thermal salt.

Delicious dish from sturgeon meat

If you are wondering what delicious dishes sturgeon makes, the suggestions below will be extremely necessary. As I said above, sturgeon has no bones so eating fish is very safe. Sturgeon meat is very firm and contains high nutritional content, so it can be processed into many attractive dishes. However, among the countless delicious dishes, two dishes that are popular with many people are sturgeon hotpot and grilled sturgeon.

The back part of the sturgeon with the most meat is often grilled, the head and tail are put into a rich sour bamboo shoot hot pot. There is nothing more to describe the attractiveness of these two dishes.

Grilled sturgeon dish

Currently, there are a number of delicious ways to prepare grilled sturgeon. You can refer to grilled sturgeon with salt and chili and grilled galangal. People often make grilled sturgeon served with laksa leaves and green chili salt.

Method 1: Grilled sturgeon with salt and chili

Prepared ingredients

– Peel fresh ginger, crush it, and squeeze out the juice. – Wash and drain the accompanying vegetables. – Chop the dried garlic and fresh chili.

Step 3: Marinate sturgeon

– In order for grilled sturgeon to be delicious, attention must be paid to the process of marinating the fish. Use ginger juice, minced garlic, minced chili, add oyster sauce, seasoning powder, MSG, a little sugar, white wine (The amount of marinade depends on the amount of grilled fish you have). – Next, stir in the spices. – Sturgeon: 1kg – Fresh galangal: a few roots – Lemongrass: 3 roots – Batch: 1 small bowl – Cooking oil, seasoning powder, sugar, MSG, fish sauce.

Implementation steps

Step 2: Marinate

This hot pot dish is similar to other hot pot dishes, the preparation and processing takes the longest time. You also need to prepare the marinated fish for hotpot carefully so that when you eat it, there is no fishy smell left. Please refer to the following way to cook sturgeon hotpot.

Ingredients needed

– Sturgeon: 1 fish – Bone – Chili pepper, Green onion, dill, ginger root – Wheat flour – Onion, dried onion, garlic, tomato – Lemon – Vegetables for hot pot: Mushroom, celery, Chrysanthemum…– Vermicelli or instant noodles.

How to cook sturgeon hotpot

Step 1: Prepare fish

You buy sturgeon, put it in a tray, apply flour on the fish and then stroke it from head to body to remove slime. Then wash the fish with clean water and cut off the fins, gills and intestines. Cut the fish. Cut sesame seeds into small pieces (about 3-4cm) and put them on a plate. The fish head and tail are left to cook hot pot.

Step 2: Cook hotpot

Put the pot of water and the bones on the stove to boil to make hot pot (fish head and fish tail for later). Peel the dried onions, peel the ginger and cut it in half. Peel the onions and cut them in half. Put them all in the oven or grill with charcoal until they smell fragrant, then smash them and put them in a pot of boiling water. .

Next, turn down the heat so the pot of water comes to a rolling boil.

Use another pan to heat up a little cooking oil and fry the dried onions until fragrant. Stir the fish head and tail briefly. Note: during the process of cooking the sturgeon hotpot broth, you must reduce the heat from simmering the bones and skim off the foam to keep the hotpot broth clear.

Peel the chili pepper, cut into small pieces and pound finely. Wash the green onions and dill. Cut the remaining green onions into small pieces and pound them into the hot pot after adding enough seasoning.

Note: onions and chili must be pounded in a mortar and not drunk because when pounding green onions, they will release their fragrance and green color, while chili peppers will release red color, creating a very characteristic taste and color for the hot pot dish.
